Vegan Pistachio Pesto 🌿 Watch me make it here
Ingredients
• 2 cups fresh basil leaves
• 1/2 cup fresh Italian flat leaf parsley leaves
• 1 large garlic clove
• 1/2 tsp kosher salt (plus more to taste)
• 1/4 tsp red pepper flakes
• 1/8 tsp black pepper
• 1/4 cup toasted pistachios
• 4 tbsp extra virgin olive oil
• 2 tbsp water
I also add 1/3 cup vegan parmesan sometimes for extra flavor and richness! Especially if I'm using this for pasta. So good!
Directions
Place the pistachios in a dry frying pan over medium heat and toast for 2-3 minutes or until fragrant and slightly toasted.
Then add the pistachios to a food processor with the remaining ingredients and pulse until combined but still slightly chunky.
Spoon on top of roasted veggies, stir through pasta with extra vegan parmesan, or mix with a little vegan mayo to create a tasty sandwich spread 🌿
