Feels Like Summer ☀️
I spent a two lovely weeks in Long Island with Nicholas and his family. We visited a few beaches, stopped by local farm stands (wow the strawberries! ) and had lots of long family dinners around the table (aka my favorite thing ❤️)

I learned a cool trick for picking the best corn at the market!
I used to think that when it comes to choosing good corn, the more yellow the better, but actually all yellow kernels means it’s slightly less sweet due to the higher starch content. So when you’re shopping for corn on the cob, look for a mix of white and yellow kernels and you’ll have super sweet and tender corn.
Sweet Summertime 🍑
I made this Peach and Strawberry Crumble after we got back from the beach and it was a big hit!
It’s very easy to put together and truly divine when served with a scoop of vegan vanilla ice cream!
I wrote this crumble recipe a few years ago, and it’s usually made with raspberries, but strawberries are great too. Best part? Frozen fruit works really well for this crumble, so you can make this Summery delight any time you like 🍑
Are You Overcomplicating Breakfast?
Summer is a time for easy meals and this breakfast is my go to.
While this may seem simple, the combination of Kashi’s Cinnamon Harvest cereal + fresh berries, banana slices, walnuts, and Ripple Unsweetened Pea Milk is truly fantastic.
It’s quick and easy, but also balanced with fiber, protein, and healthy fats.
I call these “Loaded Cereal Bowls” because just by choosing to add a high protein plant based milk, adding some fruit for extra fiber, and sprinkling in a nut or seed for fat, you suddenly transform a simple bowl of cereal that may have left you feeling hungry an hour later, into a substantial and balanced meal in a matter of minutes. Loaded cereal bowls for the win 🙌
